Let’s talk about ramen, but not any ramen, Nakayoshi Ramen Shop aka Papi Ramen Shop in Muroran.

For the newbies around here, I spent my 2020 in Japan and this was the first restaurant I tried during my first weekend. Since then, it has been a love story between me and ramen 💞.

 Papi Ramen, the chef and owner, has ramen on his blood. The family business started with his uncle on a ramen food stand and to date they have opened 6 Nakayoshi Ramen shop in the region.

With 28 years of operations, Papi ramen’s shop is the oldest. Originally from China, ramen has expanded and changed a lot. Nowadays, every region has a “special ramen”, for example,

WICHI TIME*: The Curry ramen was “created” in Muroran or at least that’s what people from the region say.

At school we had a Ramen Masterclass with Papi Ramen, sorry guys the recipe is top secret 🤐, even though we did it with him it didn’t taste the same as the one at the restaurant, but it was so yummy and interesting 🤤 to learn about. We prepared: Shio ramen (salt ramen), Shoyu ramen (Soy sauce ramen) and White miso ramen, they may all use the same vegetable soup but the base changes. He showed us how to do the chashu (braised pork belly used as topping) and the noodles which are hand-made by him.

 If you are in Muroran, it is a restaurant you must go! I mean you can’t say you went to Muroran but not to Nakayoshi Ramen. Papi Ramen is super nice and every time we went, he welcomed us with a smile, I felt like a VIP guest.

pd. I called him Papi Ramen, because I am really bad with names imagine japanese names 🤯.

pd1. Papi in french is like grandfather so he was our “ramen grandfather”.
